The wine’s specific gravity is 990 and there is very little lees at the bottom of the demijohns. When can I bottle the brew? Also, do I need to add stabilising powder? Some recipes say yes, others don’t mention it.

      You don’t need to add stabilising powder. Bottle it asap (through a filter) and then leave it for about another month or so. Then enjoy.

      You can bottle now. If you do add metabisulfite (I don’t), wait a day or two before bottling.
