Mainly, it makes it easier to fit more bottles and pick them out if they are lying sideways. They won’t fall over. It used to be important to keep the cork in contact with the wine so it didn’t dry out. So, that;s another reason to put them on their side. But now they are using plastic corks more.

It’s to keep the cork wet and the sediment on the side of the bottle (so it doesn’t fall down and muddy the wine when you decant it). Buying wine with a plastic cork in the bottle is something people who don’t know about wine do. (It’s okay if you’re buying wine for tonight’s dinner, but not if you’re buying a young heavy red with the idea of aging it for a few years.)
