      You can and though it might be somewhat drinkable……… odds are it will taste “different”.

      I am assuming that it is in the fridge because it is a white wine. With white wine, the tase startes to change immediately, even if you vacuum seal it. It will probably still be drinkable, but it definitly will not taste the same. If its a red wine, the taste won’t be as different. The best thing to do would be to keep it refridgerated.

      Yes. While temperature swings in general are not ideal for aging fine wines, this will have virtually no effect on the end product.
